Pumpkin Cupcakes

Pumpkin Cupcakes with Cinnamon Icing

A fellow nutrition coach sent me this wonderful recipe. But, will you please do me a favor?

I’m hosting Thanksgiving at my house this year and I’m experimenting with new recipes to both add to my Healthy Holiday Cookbook (for my Healthy Holiday Cooking class this coming Monday the 14th) and to surprise my dinner guests!

Oh, and here are some great things about these cupcakes:

•They’re gluten-free! No flour whatsoever. :)
•They’re full of healthy fats! These good fats actually trigger your body’s ability to burn fat calories. Our body needs GOOD fats like nuts, seeds, olive oil to absorb fat soluble vitamins. Also, good fats help lower LDL cholesterol.

Makes 12 cupcakes.

Ingredients

1 cup pumpkin puree
1 cup almond butter
1/2 cup raw honey
2 eggs
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 cup coconut butter
1/4 cup coconut oil
1/4 cup raw honey
1 tsp cinnamon

Directions

Cupcakes:
Preheat your oven to 350ºF.
In a medium sized bowl, combine all the cupcake ingredients (first 10 ingredients) and mix thoroughly to combine. Pour into a muffin tin (should make about 12 muffins). Bake until completely cooked through, about 30 minutes. You can check that by inserting a toothpick or knife into the middle of a muffin.

Icing:
In a mixing bowl, combine the last 4 ingredients, Beat the ingredients until they’re fluffy (use a mixing blade attachment or a whisk).
Let the cupcakes cool. Don’t put the frosting on the cupcakes until they are completely cooled, otherwise it will turn into a messy goop.
Use a small offset spatula or a spoon and drizzle the frosting over the top.

I’ll bet they have a partner, teammate, coach, or friend that stood by their side every step of the way to their success.

Accountability is probably THE essential component that has helped them reach their highest aspirations.

Have you ever watch the Biggest Loser show?

One of the reasons the participants are successful is because they have trainers like Jillian Michaels holding them accountable (and threatening to kick their butt!)

Just as important: The contestants are part of a supportive team that expects their members to work hard at their goals in order to win.

Their stories are inspiring. However, I’ve also seen the sad stories of those who, after the competition is over, gain ALL the weight back!

Why do you think that happened?

Because they no longer had their team and trainers there for them – not to mention the hundreds of thousands of eyeballs watching them on TV!

How about you?

Do You Do This? #1 Fat Loss Strategy Isn’t What You Think

You’ll probably be surprised at the #1 proven method to get rid of stubborn belly fat and have a toned figure…

It’s not interval training. It’s not low glycemic eating. It’s not P90X. It’s not even my boot camps.

Do you ever pay attention to what kind of “head talk” you have? Think about it. Really listen to your thoughts today. Are they mostly negative or positive?

Do you have stinking thinking?

Look at these examples and see if you’ve ever said something like this in your head:

“I should have worked out today.” “Why can’t I get this right?” “Man, I’m an idiot.” “I can’t do this.”

“You look fat.” “You failed again.” “What’s the point?” “This is too hard.” “You’re never gonna make it.”

“Ugh, I hate my thighs” (or fill in your despised body part). “I shouldn’t have eaten that.”

How did those statements make you feel? Not so inspired, huh?

Yet, how many times do you say negative things to yourself and don’t even realize it?

#1 PROVEN way to blast fat for good and have a lean, toned body:

Replace stinking thinking with positive, affirmative, encouraging thoughts. Don’t let negative thinking linger for even one second in your head!!

Practice every day. Each time a stinker comes into your mind, ERADICATE IT.

Replace non-inspiring notions like, “I should have worked out today” with “I can do this….just 10 minutes around the block.” (You’ll likely walk or jog half an hour once you get out!)

Conquer your stinking thinking and you WILL reach whatever goal you set for yourself.

I know this from personal experience – and hundreds of my clients who have celebrated success.

Oh, and I lied. I said the “#1 fat loss strategy isn’t what you think.” It IS what you think.

Life-Changing Lesson from Old Calculator Dude

A quote from one of my favorite philosophers, Blaise Pascal, recently came to my mind as I’ve struggled with some anxious thoughts about my future.  He said:

“Let each of us examine his thoughts; he will find them wholly concerned with the past or the future. We almost never think of the present, and if we do think of it, it is only to see what light it throws on our plans for the future. The present is never our end. The past and present are our means, the future alone our end. Thus WE NEVER ACTUALLY LIVE, but hope to live, and since we are always planning on how to be happy, it is inevitable that we should never be so.”

His words are so profound – and so true.  When it comes to our health and fitness goals, we’re often planning on how we’ll be happier when the tag on the jeans says a certain size or the scale gets under a prized number.

Yet, I can assure you, that most of us who “arrive” will still be unhappy with something. 

And this truth isn’t just about weight loss, but it’s true in all areas of life.

Personally, I would love to be married.  And recently I tried to get in touch with my past sweetheart – and I’m still waiting for the response I hope for.  And so, I’ve been living in the past (reliving memories of when we were together) and in the future – hoping it could still work out between us.  But I’m missing living in the present and so I’m unhappy!  Sad, isn’t it?

So, how are you living – or should I say when are you living?   I challenge you to live today.  And I encourage you to be content with yourself, your journey, and all of the blessings God has given you… TODAY.

Keep this in mind and celebrate today’s successes as you still work towards future goals – whether they be health-related or otherwise – especially because we have no guarantees that we’ll even have tomorrow.
